Brioche Switzerland Recipe

Ingredients:

  • 500g flour
  • 3 eggs
  • 100g sugar
  • 200g butter, at room temperature
  • 10g salt
  • 20g fresh yeast
  • 100ml lukewarm milk
  • 1 egg yolk

Instructions:

  1. In a large mixing bowl, combine the flour, eggs, sugar, butter, and salt. Mix together until a sticky dough forms.
  2. In a small bowl, dissolve the fresh yeast in lukewarm milk. Stir together and let sit for 5 minutes, or until frothy.
  3. Pour the yeast mixture into the large mixing bowl and stir everything together until the dough is smooth.
  4. Shape the dough into a ball and place it into a large, greased bowl. Cover the bowl with a clean kitchen towel and let sit in a warm place for 1 hour, or until the dough has doubled in size.
  5. Preheat your oven to 180°C.
  6. Once the dough has risen, punch it down and knead for a minute or two.
  7. Divide the dough into 12 equal pieces and shape each piece into a ball.
  8. Use your fingers to shape each ball into a round brioche shape and place them onto a baking sheet lined with parchment paper.
  9. Brush the tops of the brioche with an egg yolk wash (one egg yolk mixed with a teaspoon of water).
  10. Bake the brioche in the preheated oven for 20-25 minutes, or until golden brown on top.
  11. Remove from the oven and let cool for at least 10 minutes before serving.
