Broccoli Velouté Recipe

Ingredients:

  • 1 large broccoli head, chopped into florets
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups of vegetable or chicken broth
  • 1 cup of heavy cream
  • 2 tablespoons of unsalted butter
  • Salt and pepper to taste

Instructions:

  1. Heat the butter in a large saucepan over medium heat.
  2. Add the onions and garlic and cook until softened, stirring occasionally for about 5 minutes.

  9. Finish by seasoning with salt and pepper to taste.
