Ingredients:

  • 1 cup bulgur wheat
  • 1 1/2 cups boiling water
  • 4 tomatoes, diced
  • 1 large cucumber, diced
  • 1 bunch green onions, thinly sliced
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a medium bowl, pour boiling water over bulgur wheat. Stir and let sit for 30 minutes, until water is absorbed.

  3. Chop fresh parsley and mint.
  4. In a large bowl, combine the bulgur with the prepared vegetables, parsley, and mint.
