Ingredients

  • 24 Burgundy snails (fresh or canned)
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • Baguette or crusty bread for serving

Instructions

  1. If using fresh snails, clean and prepare them according to instructions. For canned snails, drain and rinse them well.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the minced garlic and cook for 1-2 minutes until fragrant.
  4. Add the snails to the skillet and cook for 2-3 minutes, stirring occasionally.
  5. Pour in the white wine and let it simmer for 2-3 minutes until the liquid is reduced by half.
  6. Add the chopped parsley and season with salt and pepper to taste.
  7. Serve the snails in their shells or in a small dish, accompanied by sliced baguette or crusty bread.
