Ingredients

  • 2 ¼ cups all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 3 large eggs
  • ½ cup unsalted butter, room temperature, cut into small pieces
  • 1 package active dry yeast
  • ½ cup warm milk

Instructions

  1. In a large mixing bowl, combine flour, sugar, and salt.
  2. Add eggs and mix until the dough forms a ball.
  3. With a dough hook attachment, mix in butter one piece at a time until fully incorporated.
  4. In a small bowl, dissolve yeast in warm milk and let stand for 5 minutes. Add the yeast mixture to the dough and mix until fully combined.
  5. Turn the dough out onto a lightly floured surface and knead until it becomes smooth and elastic.
  6. Place the dough in a greased bowl and cover with plastic wrap. Let it sit in a warm place for approximately 1 hour or until doubled in size.

  8. Divide the dough into 16 equal pieces and roll each piece into a ball. Place the balls around the edge of the brioche mold and in the center. Cover and let rise for approximately 30 minutes.
  9. Brush the top of the brioche with an egg wash (one egg beaten with one tablespoon of water).
  10. Bake for 25-30 minutes or until the brioche is golden brown. Let it cool before serving.
