Cajun Salad


Cajun Salad Recipe

  • Serves: 4

Ingredients:

  • 4 cups mixed salad greens
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 avocado, diced
  • 1/2 cup cooked corn kernels
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup Cajun-spiced chicken, sliced

Cajun Chicken:

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • Salt and pepper, to taste
  1. Combine olive oil, minced garlic, Cajun seasoning, salt and pepper in a bowl.
  2. Brush the chicken breasts evenly with the mixture.
  3. Heat a grill pan over medium heat.
  4. Cook the chicken for 6-8 minutes on each side or until fully cooked through.
  5. Set aside for 5 minutes before slicing.

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp Dijon mustard
  • 1/2 tsp honey
  • Salt and pepper, to taste
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper.
  2. Set aside until ready to use.

Assembly:

  1. In a large mixing bowl, add mixed salad greens, sliced bell peppers, sliced red onion, diced avocado, cooked corn kernels, and canned black beans. Toss to combine.
  2. Divide the salad mix into 4 plates or bowls.
  3. Top with sliced Cajun-spiced chicken.
  4. Drizzle the dressing on top of the salad and chicken.
  5. Serve immediately and enjoy!
