Cake with Red Peppers and Goat Cheese Recipe

Ingredients:

  • 1 red pepper, diced
  • 4 oz goat cheese
  • 2 tbsp olive oil
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup milk
  • 2 eggs

Instructions:

  1. Preheat oven to 350°F.
  2. In a skillet, heat 1 tbsp of olive oil over medium heat and sauté the diced red peppers for 5 minutes, or until soft. Set aside to cool.
  3. In a mixing bowl, whisk together the flour, baking powder, salt and black pepper.
  4. In a separate bowl, beat the eggs and milk together.
  5. Slowly add the wet mixture into the dry mixture and stir until well-combined.
  6. Fold in the cooled sautéed red peppers and crumbled goat cheese.
  7. Grease a 9-inch cake pan with the remaining olive oil and pour in the mixture.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Allow the cake to cool for 10 minutes before slicing into wedges and serving.
