Cake with Red Peppers and Goat Cheese Recipe
Ingredients:
- 1 red pepper, diced
- 4 oz goat cheese
- 2 tbsp olive oil
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup milk
- 2 eggs
Instructions:
- Preheat oven to 350°F.
- In a skillet, heat 1 tbsp of olive oil over medium heat and sauté the diced red peppers for 5 minutes, or until soft. Set aside to cool.
- In a mixing bowl, whisk together the flour, baking powder, salt and black pepper.
- In a separate bowl, beat the eggs and milk together.
- Slowly add the wet mixture into the dry mixture and stir until well-combined.
- Fold in the cooled sautéed red peppers and crumbled goat cheese.
- Grease a 9-inch cake pan with the remaining olive oil and pour in the mixture.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool for 10 minutes before slicing into wedges and serving.
