Cake with Walnuts and Dried Apricots

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 cup walnuts, chopped
  • 1 cup dried apricots, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  3. In a separate large bowl, beat together sugar and oil until well combined.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla extract.
  6. Slowly add the flour mixture, mixing until just combined.
  7. Fold in the chopped walnuts and dried apricots.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
