Ingredients:

  • 500g all-purpose flour
  • 1 tsp salt
  • 50g granulated sugar
  • 7g active dry yeast
  • 200ml lukewarm milk
  • 3 large eggs
  • 175g unsalted butter, softened
  • 100g candied fruit, chopped
  • Egg wash (1 egg + 1 tbsp water)

Instructions:

  1. In a large bowl, whisk together the flour, salt, sugar, and yeast.
  2. Add the lukewarm milk and eggs to the dry ingredients and mix to combine.
  3. Gradually add the softened butter to the mixture, kneading until the dough is smooth and elastic.
  4. Let the dough rest for 1 hour, or until doubled in size.
  5. Punch down the dough and knead in the chopped candied fruit.
  6. Divide the dough into 10-12 equal portions and shape into round balls.
  7. Place the balls on a lined baking sheet, cover with a damp cloth and let them rest for 30 minutes.
  8. Preheat the oven to 180°C (350°F).
  9. Brush the egg wash onto the brioche and bake them for 20-25 minutes, or until golden brown and fully cooked.
  10. Remove from the oven and let cool on a wire rack.
