Caramel Apple Muffin Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups Granny Smith apples, peeled and chopped
  • 12 soft caramel candies, unwrapped

Instructions:

  1. Preheat oven to 375°F and line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  3. In another bowl, beat eggs until frothy, add melted butter, milk and vanilla extract and mix well.
  4. Make a well in the center of the flour mixture and pour in the wet ingredients, stirring until just combined.
  5. Fold in the chopped apples.
  6. Cut each caramel candy into quarters.
  7. Spoon a heaping tablespoon of batter into each muffin cup, then place 3-4 pieces of caramel candy on top. Top each muffin cup with more batter until 3/4 full. The candy should be fully covered to prevent it from sticking to the liner.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and allow the muffins to cool for a few minutes before removing them from the pan. Serve warm or at room temperature.
