Caramel Recipe

Ingredients:

  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • 1 cup heavy cream
  • ½ cup unsalted butter, cut into pieces
  • 1 tsp. pure vanilla extract
  • 1 tsp. sea salt flakes

Directions:

  1. Line an 8-inch square baking pan with parchment paper. Set aside.
  2. In a heavy-bottomed saucepan, combine the sugar and corn syrup. Cook over medium heat, stirring until the sugar has dissolved and the mixture comes to a boil.
  3. Stop stirring and let the mixture cook until it turns a golden amber color, about 10 minutes. Keep a careful eye on the mixture as it can quickly turn burnt and bitter.
  4. Remove from the heat and carefully pour in the cream. The mixture will bubble up quite vigorously, so use caution.
  5. Stir in the butter until completely melted and smooth.
  6. Add in the vanilla extract and sea salt flakes and stir to combine.
  7. Pour the mixture into the prepared pan and let cool until set, about 2 hours.
  8. Once the caramel has cooled and hardened, remove from the pan by lifting out the parchment paper. Cut into bite-sized pieces and serve.
