Carbonara Pasta Recipe

Ingredients:

  • 1 pound spaghetti pasta
  • 6-8 ounces pancetta, chopped (you can use bacon as well)
  • 4 cloves garlic, minced
  • 4 large eggs, room temperature
  • 1 cup Parmesan cheese, freshly grated
  • 2 teaspoons black pepper
  • 1 pinch salt

Instructions:

  1. Prepare the pasta according to the instructions on the package until it is al dente.
  2. At the same time, heat a large skillet over medium heat, and add pancetta. Cook it for 4-5 minutes, until it is crispy.
  3. Add minced garlic to the pan and cook for 1-2 minutes until fragrant.
  4. In a separate mixing bowl, whisk together eggs, Parmesan cheese, black pepper, and salt. Set aside.
  5. Drain the pasta and reserve about 1 cup of the pasta water for later.
  6. Transfer the pasta to the pan with the pancetta and garlic, and mix them well.
  7. Remove the pan from heat and add the egg and cheese mixture. (Note: you have to do this off the heat, otherwise you will end up with scrambled eggs)
  8. Stir everything together until the eggs and cheese create a creamy sauce. If the sauce is too thick, add some of the reserved pasta water, 1 tablespoon at a time, until it has reached the desired consistency.
  9. Serve hot and garnish with some additional Parmesan cheese and black pepper if desired.
