Ingredients

  • 500g penne pasta
  • 6 slices of bacon, chopped
  • 4 cloves of garlic, minced
  • 4 large egg yolks
  • 1 cup freshly grated parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil. Add the penne and cook until al dente. Drain, reserving 1/2 cup of the pasta water, and set aside.
  2. Heat a large skillet over medium-high heat. Add the bacon and cook until crisp, about 8 minutes. Remove the bacon with a slotted spoon and transfer it to a paper towel-lined plate.
  3. Add the garlic to the same skillet and cook until fragrant, about 30 seconds. Remove from the heat and set aside.
  4. In a medium bowl, whisk together the egg yolks, parmesan cheese, heavy cream, butter, salt, and pepper.

  6. Cook the pasta and egg mixture, stirring constantly, until the sauce thickens and coats the pasta, about 2-3 minutes. If the sauce is too thick, add some of the reserved pasta water to thin it out.
