Carbonara Spaghetti Recipe

Ingredients:

  • 12 oz. spaghetti
  • 1 cup pancetta or bacon, chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1 cup freshly grated Pecorino Romano cheese
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente.
  2. In a large skillet, cook pancetta or bacon over medium heat until crispy. Remove from heat and transfer to a paper towel-lined plate. Reserve 2 tablespoons of the rendered fat in the pan.
  3. Whisk together eggs, Pecorino Romano cheese, garlic, salt, and pepper in a large bowl.
  4. Once spaghetti is cooked, use tongs to transfer it directly to the pancetta skillet with the reserved fat, tossing to coat in the fat.
  5. Remove the skillet from the heat and pour the egg mixture over the spaghetti. Gently toss until the eggs are cooked and the cheese is melted and coating the spaghetti.
  6. Season with salt and black pepper to taste.
  7. Transfer to a serving plate and top with crispy pancetta or bacon.
