Carrot and Leek Tart Recipe

Ingredients:

  • 1 pre-made shortcrust pastry
  • 2 medium-sized carrots, sliced thinly
  • 1 medium-sized leek, sliced thinly
  • 1 cup grated cheddar cheese
  • 3 eggs
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Lightly grease a 9-inch tart pan and line it with the pre-made shortcrust pastry.
  3. In a medium-sized skillet, melt the butter over medium heat.
  4. Add the sliced leeks and cook for about 5 minutes or until the leeks are tender and slightly caramelized.
  5. Add in the sliced carrots and continue cooking for another 5-7 minutes, or until the carrots are tender and lightly browned.
