Casserole Sourdough Bread Recipe

Ingredients:

  • 1 pound sourdough bread, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup corn kernels
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 eggs, lightly beaten
  • 1/2 cup milk
  • 1/2 cup chicken or vegetable broth
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish with cooking spray.
  3. Spread the sourdough bread cubes in the baking dish, and set aside.
  4. In a large skillet or Dutch oven, melt the butter over medium heat.
  5. Add the onion and garlic, and cook until softened, for about 5 minutes.
  6. Add the red and yellow bell peppers, and cook for an additional 5 minutes, until softened.
  7. Add the corn, thyme, oregano, smoked paprika, salt and black pepper to the skillet, and stir well to combine. Remove from heat.
  8. In a mixing bowl, whisk together the eggs, milk, and chicken or vegetable broth.
  9. Pour the egg mixture over the sourdough bread cubes in the baking dish, and toss well to coat.
  10. Pour the pepper and corn mixture over the top of the bread cubes, spreading it evenly over the top.
  11. Sprinkle the shredded cheese over the top of the casserole.
  12. Cover the baking dish with foil, and bake in the preheated oven for 20 minutes.
  13. Remove the foil, and bake for an additional 20-25 minutes, until the cheese is melted and the casserole is lightly browned on top.
  14. Remove from the oven, and let cool for 5 minutes before serving.
