Cauliflower Cream Pasta Recipe
Ingredients:
- 1 large head of cauliflower, cored and chopped into small pieces
- 1 pound of spaghetti
- 2 cloves of garlic, minced
- 1/4 cup of olive oil
- Salt and pepper, to taste
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of fresh parsley, chopped
Instructions:
- Begin by boiling a large pot of salted water for the spaghetti pasta, according to package directions.
- While the water comes to a boil, in a separate saucepan, heat the olive oil over medium heat and sauté the minced garlic until fragrant. Add the cauliflower and cook for 10-12 minutes or until the cauliflower is fork-tender.
- Using an immersion blender or a food processor, blend the cooked cauliflower and garlic mixture into a smooth and creamy consistency. Add salt and pepper to taste.
- Cook the spaghetti according to package directions, but slightly undercook by a minute or two. Reserve one cup of the pasta water before draining the spaghetti.
- In the same pot used for the pasta, add the blended cauliflower mixture, drained pasta, reserved pasta water, and grated Parmesan cheese. Toss everything together until the pasta is thoroughly coated with the cauliflower cream sauce.
- Stir in the freshly chopped parsley and serve hot.

This Cauliflower Cream Pasta is a delicious and healthy alternative to traditional cream sauce pasta. The creamy and vegetable-filled sauce compliments the spaghetti perfectly and the addition of grated Parmesan cheese makes it even more flavorful.
