Ingredients:

  • 1 large head cauliflower, cut into florets
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375F.
  2. Steam the cauliflower florets in a large pot for about 7-8 minutes, or until they are tender but not mushy. Set aside.
  3. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and continue to whisk for 1-2 minutes, until the mixture is smooth.
  4. Gradually add the milk, whisking constantly, until the mixture is smooth and has no lumps. Add the garlic powder, thyme, and salt and pepper to taste.
  5. Simmer the mixture for 5-6 minutes, until it has thickened and coats the back of a spoon.
  6. Stir in 3/4 cup of the Parmesan cheese, and mix until it is fully melted and incorporated.
  7. Transfer the steamed cauliflower florets to a 9×13 inch baking dish. Pour the cheese sauce over the cauliflower and spread it evenly.
  8. In a small bowl, combine the remaining Parmesan cheese and breadcrumbs. Sprinkle the mixture over the cauliflower and cheese sauce.
  9. Bake for 25-30 minutes, or until the top is golden brown and the cauliflower is heated through.
  10. Let cool for a few minutes before serving.
