  • 1 large cauliflower, trimmed and cut into florets
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Blanch the cauliflower florets in boiling salted water for 5 minutes until tender. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 2 minutes to make a roux.
  4. Gradually stir in the milk, salt, and pepper and continue whisking until the sauce thickens. This should take about 5 minutes.
  5. Remove the saucepan from heat and add the grated Parmesan cheese. Stir until the cheese has fully melted and combined with the sauce.
  6. Add the cauliflower to the sauce and mix well.
  7. Transfer the cauliflower mixture into a baking dish and sprinkle the breadcrumbs on top.
  8. Bake for about 25-30 minutes until the breadcrumbs are golden brown and the cauliflower is hot and bubbly.
