Chanterelle Quiche Recipe

Ingredients:

  • 1 pre-made pie crust (9-inch)
  • 1 cup chanterelle mushrooms, cleaned and chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 eggs
  • 1 cup heavy cream
  • 1/2 cup shredded Gruyere cheese
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and press it into a 9-inch pie dish. Trim the excess dough and prick the bottom of the crust all over with a fork.
  3. Melt the butter in a large skillet over medium heat. Add the chopped onions and cook until softened, about 5 minutes.
  4. Add the chopped chanterelle mushrooms and minced garlic to the skillet. Cook for another 5-7 minutes until the mushrooms are tender and the liquid has cooked off. Remove from heat and set aside.
  5. In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper.
  6. Add the mushroom mixture to the pie crust and spread it out evenly. Sprinkle the Gruyere cheese over the mushrooms.
  7. Pour the egg mixture over the cheese and carefully transfer the quiche to the oven.
  8. Bake for 35-40 minutes until the center is set and the top is golden brown.
  9. Remove from the oven and let cool for 5-10 minutes before slicing and serving.
