Charlotte with Strawberries and Mascarpone Recipe

Ingredients

  • 12-14 ladyfingers or sponge cake slices
  • 1 pound of fresh strawberries, washed and sliced
  • 1 1/2 cup heavy cream
  • 8 ounces mascarpone cheese
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium-sized saucepan, combine sugar and water. Heat over medium-high heat and bring to boil. Stir occasionally until sugar is completely dissolved.
  2. Add sliced strawberries and lemon juice to the sugar syrup and stir to combine. Lower the heat to medium and simmer, stirring frequently for about 10-15 minutes, until the strawberry sauce thickens and coats the back of a spoon.
  3. Set aside the strawberry sauce and let it cool.
  4. In a medium-sized bowl, whisk together heavy cream, mascarpone cheese, and vanilla extract until soft peaks forms.
  5. Dip ladyfingers into the strawberry syrup and set aside.
  6. Cut the remaining ladyfingers to fit the inner edge of a 9″ springform pan. Press the ladyfingers vertically against the edge of the pan so that the sugared side faces out.
  7. Arrange a layer of the soaked ladyfingers on the bottom of the pan, and then spread a layer of the mascarpone mixture on top.
  8. Add a layer of sliced strawberries on top of the mascarpone mixture. Repeat the layering process two more times, finishing with a final layer of mascarpone mixture on top.
  9. Refrigerate the tiramisu for at least 4 hours, or preferably overnight before serving.

Serving suggestions

To serve, remove the tiramisu from the springform pan and slice it into a beautiful dessert. Serve with a drizzle of strawberry sauce, extra strawberries, and fresh mint leaves.
