Chestnut Puree Recipe

Ingredients:

  • 1 pound fresh chestnuts
  • 4 cups water
  • 2/3 cup sugar
  • 1 vanilla bean
  • zest of 1 orange
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Score the flat side of each chestnut with a sharp knife, making a shallow X in the shell.
  3. Place the chestnuts on a baking sheet and bake for 30 minutes.
  4. Let them cool slightly, then peel them while they’re still warm. Discard the shells and the thin outer skins.
  5. In a medium-sized pot, combine the peeled chestnuts, water, sugar, vanilla bean, orange zest, and salt.

  7. Remove the vanilla bean from the pot and scrape out the seeds with a knife. Discard the bean.
