Chestnut Velouté Recipe

Ingredients:

  • 1 pound chestnuts, peeled and quartered
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions:

  1. Melt the butter in a large pot over medium heat. Saute the onion and garlic until soft, about 5 minutes.
  2. Add the chestnuts to the pot and stir to coat with the butter. Pour in the broth and bring to a boil.
  3. Reduce heat to low, cover the pot, and simmer for 30 minutes or until the chestnuts are tender.

  5. Return the pot to low heat. Stir in the cream and heat until warmed through. Season with salt and pepper to taste.
