Chestnut Spread

Ingredients

  • 450g chestnuts
  • 4 tbsp honey
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 200°C/400F.
  2. Cut a small slit in the tops of each chestnut to prevent them from exploding while roasting. Roast chestnuts in the oven for 20-25 minutes, or until softened and roasted through.
  3. Remove from the oven and allow to cool. Start peeling off the outer, hard shell and the thin brown skin immediately before they get cold. Use a paper towel to protect your hands from burning.
  4. In a food processor, pulse the chestnuts until finely chopped.
  5. Add honey, butter, vanilla extract, cinnamon, nutmeg, and salt, and pulse again until smooth.
  6. Taste and adjust seasoning as necessary.
  7. Serve warm, cold, or at room temperature as a spread on toast, muffins, crackers, or bread. It can also be used as a dip for fruits or vegetables.
