Instructions

  1. Heat the olive oil in a large, deep skillet or paella pan over medium-high heat.
  2. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the pan and set aside.
  3. Add the onions, garlic, and bell peppers to the pan and sauté until softened, about 5 minutes.
  4. Add the smoked paprika, saffron, salt, and black pepper and stir well.
  5. Add the diced tomatoes (with their juices) and cook for 5 more minutes, stirring occasionally.
  6. Add the rice and chicken broth and stir well to combine.
