Chicken Tagine Marinated My Way

Ingredients

  • 1 kg chicken thigh fillets, boneless and skinless
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 2 teaspoons cinnamon
  • 2 teaspoons coriander
  • 1 teaspoon turmeric
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken stock
  • 1 cup pitted green olives
  • 1/2 cup dates, chopped
  • 1/2 cup raisins
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine cumin, paprika, cinnamon, coriander, turmeric, honey, and 1 tablespoon of olive oil. Mix well.
  2. Add chicken and rub the marinade all over it. Cover with a plastic wrap and refrigerate for at least 30 minutes.
  3. In a large pot, heat the remaining olive oil over medium-high heat. Add the onion and sauté until softened. Add the garlic and sauté for another minute.
  4. Add the chicken and sauté until browned on all sides.
  5. Add the chicken stock, olives, dates, raisins, cilantro, and season with salt and pepper.
  6. Reduce the heat to low, cover with a lid and simmer for 60-70 minutes or until the chicken is cooked through and tender.
  7. Remove from heat and serve hot with couscous or rice.
