Chicken Tagine Marinated My Way
Ingredients
- 1 kg chicken thigh fillets, boneless and skinless
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 teaspoons cinnamon
- 2 teaspoons coriander
- 1 teaspoon turmeric
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups chicken stock
- 1 cup pitted green olives
- 1/2 cup dates, chopped
- 1/2 cup raisins
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Directions
- In a large bowl, combine cumin, paprika, cinnamon, coriander, turmeric, honey, and 1 tablespoon of olive oil. Mix well.
- Add chicken and rub the marinade all over it. Cover with a plastic wrap and refrigerate for at least 30 minutes.
- In a large pot, heat the remaining olive oil over medium-high heat. Add the onion and sauté until softened. Add the garlic and sauté for another minute.
- Add the chicken and sauté until browned on all sides.
- Add the chicken stock, olives, dates, raisins, cilantro, and season with salt and pepper.
- Reduce the heat to low, cover with a lid and simmer for 60-70 minutes or until the chicken is cooked through and tender.
- Remove from heat and serve hot with couscous or rice.
