Chicken tagine with dates

Chicken Tagine with Dates Recipe

Ingredients:

  • 6 chicken thighs, bone-in and skin-on
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/2 cup pitted dates, chopped
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Mix together the cumin, coriander, ginger, cinnamon, salt, and pepper in a small bowl. Rub the spice mixture over the chicken thighs.
  2. Heat olive oil in a large tagine or Dutch oven over medium-high heat. Sear the chicken thighs on both sides until golden brown, about 5 minutes per side.
  3. Remove the chicken from the tagine and set aside.
  4. Add the sliced onion and minced garlic to the tagine and cook until the onions are softened, about 5 minutes.
  5. Pour in the chicken broth, chopped dates, honey, and lemon juice. Stir to combine and bring the liquid to a simmer.
  6. Return the chicken to the tagine and cover with the lid. Reduce the heat to low and simmer for about 30-40 minutes, until the chicken is fully cooked.
  7. Remove the lid and simmer for an additional 5-10 minutes to thicken the sauce.
  8. Remove the tagine from the heat and sprinkle the chopped parsley on top before serving.
