Chocolate-chestnut log Recipe

Ingredients:

  • 1 cup cooked and mashed chestnuts
  • 1/2 cup granulated sugar
  • 3 eggs, separated
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp vanilla extract
  • 1/2 cup whipping cream
  • 1/4 cup powdered sugar
  • 1/2 cup chopped walnuts

Directions:

  1. Preheat the oven to 350°F (180°C) and grease a 9×13 inch baking pan.
  2. Beat the chestnuts and granulated sugar together in a large bowl until well combined.
  3. Beat in the egg yolks, one at a time, followed by the cocoa powder and vanilla extract.
  4. In a separate bowl, beat the egg whites until they form stiff peaks. Fold them into the chestnut mixture.
  5. Pour the mixture into the prepared baking pan and bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Lay a clean damp towel on a flat surface and sprinkle it with powdered sugar.
  7. Carefully remove the cake from the pan and place it on the towel. Roll it up tightly, starting from the short end. Let it cool completely.
  8. While the cake is cooling, whip the cream and powdered sugar together until stiff peaks form.
  9. Unroll the cake and spread the whipped cream over the top. Sprinkle with chopped walnuts.
  10. Carefully roll the cake back up and transfer it to a serving platter. Refrigerate until ready to serve.
