Chorba Soup Recipe

Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 pound stewing beef, cut into small chunks
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 can diced tomatoes (14 oz)
  • 6 cups beef broth
  • 1 can chickpeas (15 oz)
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic and sauté until the onion is translucent, about 5 minutes.
  2. Add the beef and cook until browned on all sides, about 10 minutes.
  3. Stir in the paprika, cumin, and coriander and cook for another minute.
  4. Add the diced tomatoes with their juice, beef broth, chickpeas, chopped carrots, and chopped potatoes. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for at least 1 hour until the beef is tender and the vegetables are cooked through.
  6. Stir in the chopped parsley and season with salt and pepper to taste.
