Christophe Felder-style Breton Shortbread Recipe

Ingredients

  • 300g of flour
  • 200g of butter, softened
  • 150g of sugar
  • 3 egg yolks
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder

Instructions

  1. Preheat the oven to 180°C (350°F)
  2. In a large bowl, whisk together the flour, salt, and baking powder
  3. In a separate bowl, using an electric mixer, cream the butter and sugar until fluffy
  4. Beat in the egg yolks, one at a time
  5. Slowly add the flour mixture to the butter mixture, until well combined and the dough comes together
  6. Form the dough into a ball, wrap it in plastic wrap, and chill it in the refrigerator for 30 minutes
  7. Roll out the dough to approximately 1 cm (0.4 inches) thick on a lightly floured surface
  8. Cut out shapes using cookie cutters or a sharp knife and place them onto a baking sheet lined with parchment paper
  9. Bake the shortbread for 15-20 minutes, or until they are a light golden brown
  10. Allow the shortbread to cool on a wire rack before serving
