Christophe Felder-style Breton Shortbread Recipe
Ingredients
- 300g of flour
- 200g of butter, softened
- 150g of sugar
- 3 egg yolks
- 1 teaspoon of salt
- 1 teaspoon of baking powder
Instructions
- Preheat the oven to 180°C (350°F)
- In a large bowl, whisk together the flour, salt, and baking powder
- In a separate bowl, using an electric mixer, cream the butter and sugar until fluffy
- Beat in the egg yolks, one at a time
- Slowly add the flour mixture to the butter mixture, until well combined and the dough comes together
- Form the dough into a ball, wrap it in plastic wrap, and chill it in the refrigerator for 30 minutes
- Roll out the dough to approximately 1 cm (0.4 inches) thick on a lightly floured surface
- Cut out shapes using cookie cutters or a sharp knife and place them onto a baking sheet lined with parchment paper
- Bake the shortbread for 15-20 minutes, or until they are a light golden brown
- Allow the shortbread to cool on a wire rack before serving
