Clafoutis with Mushrooms, Cheese and Leeks

Ingredients:

  • 4 eggs
  • 3/4 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon unsalted butter, melted
  • 1/2 cup shredded gruyere cheese
  • 1 leek, thinly sliced
  • 1 cup sliced mushrooms
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Preheat oven to 375°F. Grease a 9-inch baking dish with butter.
  2. In a large bowl, whisk together eggs and milk until well combined.
  3. Add flour, salt, and black pepper and whisk until smooth.
  4. Mix in melted butter and gruyere cheese and set aside.
  5. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the leeks and sauté for 3-4 minutes until they soften.
  6. Add sliced mushrooms and sauté for another 5-6 minutes until mushrooms turn golden brown.

  10. Bake for 30-35 minutes or until the clafoutis is golden brown and set in the middle.
  11. Let it cool for 5 minutes before serving.
