Cocoa and Tahini Cookies

Ingredients:

  • 1/2 cup tahini (sesame puree)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup chocolate chips

Directions:

  1. Preheat the oven to 350F.
  2. In a large bowl, cream together the tahini, butter, and sugars until light and fluffy, using a hand mixer or a stand mixer.
  3. Add in the eggs and vanilla extract, and mix until fully combined.
  4. In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients, and mix until a dough forms.
  6. Stir in the chocolate chips.
  7. Scoop the dough onto a parchment-lined baking sheet, using 1-2 tbsp. of dough per cookie.
  8. Bake for 12-15 minutes, until the cookies are set and slightly cracked on top.
  9. Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
