Cod on Leek Fondue Recipe

Ingredients

  • 4 pieces of cod fillet (6 ounces each)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 leeks, sliced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Season the cod fillets evenly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for about 3-4 minutes per side, or until browned. Transfer the cod to a baking sheet and bake in the preheated oven for 6-8 minutes, or until the cod is cooked through.
  3. Meanwhile, melt the butter in the same skillet over medium heat. Add the sliced leeks and cook for 5-7 minutes, or until the leeks are tender.
  4. Pour in the heavy cream and chicken broth and stir until combined. Cook for 5-7 minutes, or until the mixture has thickened slightly.
  5. Stir in the lemon juice and chopped parsley. Season with salt and pepper to taste.
  6. Divide the leek fondue among 4 plates. Top each plate with a piece of cod fillet and serve immediately.
