Cod Teriyaki Recipe

Ingredients:

  • 4 cod fillets
  • 1/2 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, thinly sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds and chopped green onions for garnish

Directions:

  1. Preheat your oven to 375°F.
  2. Make the teriyaki sauce by combining soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and sliced green onions in a medium bowl and whisking together until smooth.
  3. Place the cod fillets in a baking dish and pour the teriyaki sauce over them, making sure that each fillet is coated evenly with the sauce.
  4. Bake for 15 to 20 minutes or until the fish is cooked through and flakes easily with a fork.
  5. In a small bowl, mix cornstarch and water to make a slurry. Pour this into the remaining teriyaki sauce and cook over medium heat for 3 to 5 minutes until the sauce thickens into a glaze.
  6. Brush the glaze over the baked cod fillets and sprinkle sesame seeds and chopped green onions for garnish.
  7. Serve with steamed rice and sautéed vegetables.
