Cookeo Cantonese Rice Recipe
Ingredients
- 1 cup jasmine rice
- 1 ½ cups water
- 1 tbsp vegetable oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 3 eggs, beaten
- 2 green onions, thinly sliced
Instructions
- Rinse rice in a fine mesh sieve until water runs clear. Drain well.
- Set Cookeo to “Brown” setting and heat vegetable oil.
- Add chopped onions and minced garlic and cook until onions are translucent.
- Add frozen peas and carrots and cook until vegetables are tender.
- Stir in rinsed rice, oyster sauce, soy sauce, sesame oil and water.
- Close and lock the lid. Set Cookeo for rice cooking, on a low-pressure setting for 12 minutes.
- After the first cooking cycle, release pressure and open the lid. Stir cooked rice mixture thoroughly.
- Slightly beat the eggs in a small bowl. Pour eggs into the Cookeo and stir until eggs are cooked.
- Garnish with thinly sliced green onions and serve hot.
