Cookeo Cantonese Rice Recipe

Ingredients

  • 1 cup jasmine rice
  • 1 ½ cups water
  • 1 tbsp vegetable oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 3 eggs, beaten
  • 2 green onions, thinly sliced

Instructions

  1. Rinse rice in a fine mesh sieve until water runs clear. Drain well.
  2. Set Cookeo to “Brown” setting and heat vegetable oil.
  3. Add chopped onions and minced garlic and cook until onions are translucent.
  4. Add frozen peas and carrots and cook until vegetables are tender.
  5. Stir in rinsed rice, oyster sauce, soy sauce, sesame oil and water.
  6. Close and lock the lid. Set Cookeo for rice cooking, on a low-pressure setting for 12 minutes.
  7. After the first cooking cycle, release pressure and open the lid. Stir cooked rice mixture thoroughly.
  8. Slightly beat the eggs in a small bowl. Pour eggs into the Cookeo and stir until eggs are cooked.
  9. Garnish with thinly sliced green onions and serve hot.
