Coq au Vin Style Chicken Recipe

Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 6 slices bacon, chopped
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups red wine
  • 1 1/2 cups chicken broth
  • 2 cups sliced mushrooms
  • 2 teaspoons fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. Preheat oven to 350°F.
  2. Season the chicken thighs with salt and pepper.
  3. In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pot.
  4. Add the chicken to the pot, skin side down, and cook until golden brown, about 5 minutes. Turn the chicken over and cook for another 5 minutes. Remove the chicken from the pot and set aside.
  5. Add the onion and garlic to the pot and sauté until soft, about 3 minutes. Sprinkle the flour over the vegetables and stir to combine.
  6. Pour in the red wine and chicken broth and stir well. Add the mushrooms, thyme, and bay leaf. Add the chicken and bacon back to the pot.
  7. Bring to a simmer then cover and transfer the pot to the preheated oven. Bake for 45 minutes to 1 hour, or until the chicken is cooked through.
  8. Remove the bay leaf and season with salt and pepper to taste. Garnish with chopped parsley and serve hot.
