Corsican Mountain Soup Recipe

Ingredients:

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 lb sausage (preferably Corsican sausage), sliced
  • 1 can diced tomatoes
  • 6 cups chicken broth
  • 1 cup dried pasta (preferably small shells or elbow macaroni)
