Country terrine


Country Terrine Recipe

Ingredients:

  • 1 pound ground pork
  • 1 pound ground beef
  • 1/2 pound bacon, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup brandy
  • 1 tablespoon dried thyme
  • 1 teaspoon ground allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped parsley
  • 6 hard-boiled eggs, peeled
  • 1/2 cup dry breadcrumbs

Instructions:

  1. In a large bowl, mix together the ground pork, ground beef, bacon, onion, garlic, brandy, thyme, allspice, salt, pepper, and parsley until well combined.
  2. Preheat the oven to 325F.
  3. Line a loaf pan with plastic wrap and press half of the meat mixture into the bottom.
  4. Lay the hard-boiled eggs in a row down the center of the meat mixture.
  5. Sprinkle the breadcrumbs over the eggs.
  6. Top with the remaining meat mixture and press down firmly to seal.
  7. Cover the top with plastic wrap and place the loaf pan into a larger baking dish, such as a roasting pan.
  8. Fill the larger pan with hot water so that it reaches halfway up the sides of the loaf pan.
  9. Bake for 2-2.5 hours, until the terrine is firm and cooked through.
  10. Remove from the oven and let cool to room temperature.
  11. Place a large plate on top of the loaf pan and invert the terrine onto the plate.
  12. Remove the plastic wrap and slice the terrine into thick slices to serve.
