Country Terrine Recipe
Ingredients:
- 1 pound ground pork
- 1 pound ground beef
- 1/2 pound bacon, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 1/4 cup brandy
- 1 tablespoon dried thyme
- 1 teaspoon ground allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped parsley
- 6 hard-boiled eggs, peeled
- 1/2 cup dry breadcrumbs
Instructions:
- In a large bowl, mix together the ground pork, ground beef, bacon, onion, garlic, brandy, thyme, allspice, salt, pepper, and parsley until well combined.
- Preheat the oven to 325F.
- Line a loaf pan with plastic wrap and press half of the meat mixture into the bottom.
- Lay the hard-boiled eggs in a row down the center of the meat mixture.
- Sprinkle the breadcrumbs over the eggs.
- Top with the remaining meat mixture and press down firmly to seal.
- Cover the top with plastic wrap and place the loaf pan into a larger baking dish, such as a roasting pan.
- Fill the larger pan with hot water so that it reaches halfway up the sides of the loaf pan.
- Bake for 2-2.5 hours, until the terrine is firm and cooked through.
- Remove from the oven and let cool to room temperature.
- Place a large plate on top of the loaf pan and invert the terrine onto the plate.
- Remove the plastic wrap and slice the terrine into thick slices to serve.
