Cream of Lentils with Smoked Breast Recipe
Ingredients:
- 1 cup of lentils
- 4 cups of chicken broth
- 1 onion, chopped finely
- 3 garlic cloves, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of smoked paprika
- 1 tablespoon of olive oil
- 1/2 cup of heavy cream
- Salt and pepper to taste
- Smoked Turkey breast slices (as much as you want)
Instructions:
- In a large pot, heat the olive oil over medium-high heat.
- Add onion and garlic, cook until it’s golden brown.
- Add cumin, coriander, and smoked paprika, stir for a minute then add lentils and chicken broth.
- Season with salt and pepper, stir to combine all ingredients.
- Bring the mixture to boil, then reduce the heat and let it simmer for 45 minutes or until the lentils are tender.
- Once the lentils are tender, turn off the heat and let it cool for 5 minutes.
- Take a blender and blend the soup until it’s smooth.
- Return the blended soup to the pot over low heat.
- Pour in the heavy cream and stir well.
- Simmer the soup for a few minutes until it’s heated through.
- Toast the smoked turkey breast slices in a pan.
- Arrange the toasted smoked turkey breast slices on top of the cream of lentils soup.
- Serve and enjoy!
