Creme Brulee Tart Recipe

Ingredients:

  • 1 unbaked 9 inch pie crust
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 6 egg yolks
  • 1/2 cup granulated sugar for caramelizing

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Press pie crust into a 9 inch tart pan. Place in freezer while making the filling.
  3. In a medium saucepan, heat cream over medium heat until it begins to steam. Remove from heat.
  4. In a separate bowl, whisk together 1/2 cup sugar, vanilla extract, and egg yolks until well combined.
  5. Slowly pour hot cream into egg mixture while whisking continuously.
  6. Once fully incorporated, pour mixture into the tart crust.
  7. Bake for 30-35 minutes, until filling is set and no longer jiggly in the center.
  8. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  9. Just before serving, sprinkle the remaining 1/2 cup of sugar evenly over the top of the tart.
  10. Using a kitchen torch, carefully caramelize the sugar on top until it is golden brown and bubbly.
  11. Let cool for a minute or two, then slice and serve.
