Creole Fish Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tablespoon tomato paste
  • 1 pound white fish, cut into cubes
  • 1 tablespoon Worcestershire sauce
  • Salt to taste
  • 4 cups cooked white rice
  • Chopped parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, bell pepper, and celery. Cook until they have softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute more.
  4. Add the paprika, thyme, cayenne pepper, and black pepper. Stir until the vegetables are coated with the spices.
  5. Gradually pour in the chicken broth while stirring.
  6. Add the diced tomatoes and tomato paste into the pot. Simmer for about 15 minutes.
  7. Add the fish and Worcestershire sauce. Cook for 5-7 minutes or until the fish is cooked through.
  8. Salt to taste.
  9. Divide the cooked white rice into 4 bowls and ladle the soup over the rice.
  10. Garnish with chopped parsley and serve hot.
