Cutlet Milanese Recipe
Ingredients
- 4 veal cutlets (or chicken cutlets for a cheaper alternative)
- 1 cup all-purpose flour
- 3 eggs, beaten
- 1 1/2 cups breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil, for frying
Instructions
- Start by prepping your meat. Use a meat mallet to pound the cutlets until they are thin and even in size.
- Place the flour in a shallow dish, the beaten eggs in another shallow dish, and the breadcrumbs, Parmesan cheese, parsley, garlic powder, salt, and black pepper in a third shallow dish. Mix the breadcrumb mixture well.
- Coat each cutlet in the flour, then dip it in the beaten eggs, and finally coat it well in the breadcrumb mixture.
- Heat enough olive oil in a large frying pan to cover the bottom of the pan. Once hot, add the breaded cutlets and fry for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the cutlets from the pan and place them on a paper towel-lined plate to drain off any excess oil.
- Serve the cutlets hot, sprinkled with a bit of extra Parmesan cheese and chopped parsley for garnish if desired.
