Cyril Lignac-style Pancakes
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate large bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
- Pour the dry ingredients into the wet ingredients and mix gently until just combined. Be careful not to overmix, there may be lumps.
- Heat a non-stick pan over medium-low heat. Pour about 1/4 cup of batter into the pan for each pancake.
- Cook the pancakes until the surface is full of bubbles and the edges start to dry, about 2-3 minutes. Flip each pancake and cook until the other side is golden brown, about 1-2 minutes.
- Repeat with the remaining batter until all pancakes are cooked
- Serve warm with maple syrup and fresh fruit as your desire.
