Cyril Lignac-style Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate large bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
  3. Pour the dry ingredients into the wet ingredients and mix gently until just combined. Be careful not to overmix, there may be lumps.
  4. Heat a non-stick pan over medium-low heat. Pour about 1/4 cup of batter into the pan for each pancake.
  5. Cook the pancakes until the surface is full of bubbles and the edges start to dry, about 2-3 minutes. Flip each pancake and cook until the other side is golden brown, about 1-2 minutes.
  6. Repeat with the remaining batter until all pancakes are cooked
  7. Serve warm with maple syrup and fresh fruit as your desire.
