Dahl with Coral Lentils Recipe
Ingredients:
- 1 1/2 cups of coral lentils
- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 onion, chopped
- 3 cloves of garlic, diced
- 1 tbsp of grated ginger
- 1 red chilli, seeds removed and finely chopped
- 2 tbsp of olive oil
- 1 can of chopped tomatoes
- 3 cups of water (or vegetable broth)
- Salt and pepper to taste
- 2 tbsp of fresh coriander, chopped
Instructions:
- Rinse the lentils in cold water and drain.
- Heat olive oil in a large pot over medium heat.
- Add the onion and cook until it is soft and translucent, stirring occasionally (around 5 minutes).
- Add the garlic, ginger and chilli and cook for another minute.
- Stir in the turmeric, cumin and coriander and cook for another 30 seconds.
- Add the washed lentils, canned tomatoes, water (or vegetable broth) salt and pepper.
- Stir everything together and bring the mixture to a boil.
- Reduce the heat and let it simmer until the lentils are tender (around 25 to 30 minutes).
- Serve hot with fresh coriander and naan bread.
