Dahl with Coral Lentils Recipe

Ingredients:

  • 1 1/2 cups of coral lentils
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 onion, chopped
  • 3 cloves of garlic, diced
  • 1 tbsp of grated ginger
  • 1 red chilli, seeds removed and finely chopped
  • 2 tbsp of olive oil
  • 1 can of chopped tomatoes
  • 3 cups of water (or vegetable broth)
  • Salt and pepper to taste
  • 2 tbsp of fresh coriander, chopped

Instructions:

  1. Rinse the lentils in cold water and drain.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the onion and cook until it is soft and translucent, stirring occasionally (around 5 minutes).
  4. Add the garlic, ginger and chilli and cook for another minute.
  5. Stir in the turmeric, cumin and coriander and cook for another 30 seconds.
  6. Add the washed lentils, canned tomatoes, water (or vegetable broth) salt and pepper.
  7. Stir everything together and bring the mixture to a boil.
  8. Reduce the heat and let it simmer until the lentils are tender (around 25 to 30 minutes).
  9. Serve hot with fresh coriander and naan bread.
