Damson Pie Recipe

Ingredients:

  • 500g damsons, halved and stoned
  • 1 tablespoon cornflour
  • 1 tablespoon caster sugar
  • 1 tablespoon lemon juice
  • 1 x quantity shortcrust pastry
  • Splash of milk

Instructions:

  1. Preheat the oven to 180°C/gas mark 4.
  2. In a mixing bowl, combine the damsons, cornflour, caster sugar and lemon juice.
  3. Roll out the pastry and use it to line the base of the pie dish.
  4. Add the damson mixture to the pie dish.
  5. Roll out the remaining pastry to make a lid for the pie.
  6. Brush the lid with milk and place it on top of the pie filling.
  7. Press the edges together to seal the pie.
  8. Using a knife, make a few small slits on the top of the pie.
  9. Bake for 35-40 minutes or until the pastry is golden brown.
  10. Let the pie rest for 10 minutes before slicing and serving.

This damson pie recipe is a delicious way to use up a glut of damsons. The tartness of the fruit is balanced by the sweet pastry, making for a perfectly moreish dessert.
