Damson Pie Recipe
Ingredients:
- 500g damsons, halved and stoned
- 1 tablespoon cornflour
- 1 tablespoon caster sugar
- 1 tablespoon lemon juice
- 1 x quantity shortcrust pastry
- Splash of milk
Instructions:
- Preheat the oven to 180°C/gas mark 4.
- In a mixing bowl, combine the damsons, cornflour, caster sugar and lemon juice.
- Roll out the pastry and use it to line the base of the pie dish.
- Add the damson mixture to the pie dish.
- Roll out the remaining pastry to make a lid for the pie.
- Brush the lid with milk and place it on top of the pie filling.
- Press the edges together to seal the pie.
- Using a knife, make a few small slits on the top of the pie.
- Bake for 35-40 minutes or until the pastry is golden brown.
- Let the pie rest for 10 minutes before slicing and serving.
