Ingredients

  • 1 tablespoon olive oil
  • 4 chicken thighs, bone-in and skin-on
  • 6 merguez sausages, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 2 cups chicken broth
  • 1 can diced tomatoes, drained
  • 1 cup couscous
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for serving)

Instructions

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Add the chicken thighs, skin side down, and cook for 4-5 minutes until golden brown.
  3. Flip the chicken and cook for an additional 4-5 minutes until browned on the other side. Remove the chicken from the pan and set aside.
  4. Add the sliced merguez sausage to the same pan and cook until browned, stirring occasionally. Remove the sausage from the pan and set aside with the chicken.
  5. Add the chopped onion to the pan and cook for 3-4 minutes until softened.
  6. Add the minced garlic, cumin, smoked paprika, cinnamon, ginger, and coriander to the pan and cook for 1-2 minutes until fragrant.
