Easy Chicken Tikka Recipe
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 teaspoons cumin
- 2 teaspoons paprika
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 8-10 bamboo skewers, soaked in water for 30 minutes
Instructions:
- In a large bowl, whisk together yogurt, lemon juice, olive oil, cumin, paprika, coriander, turmeric, salt, cayenne pepper and black pepper.
- Add the chicken, stirring until coated in the marinade. Cover and refrigerate for at least 1 hour (or up to 12 hours for best results).
- Preheat grill to medium-high heat. Thread chicken onto the soaked skewers, then grill for 12-15 minutes, turning occasionally, until chicken is cooked through and slightly charred around the edges.
- Remove chicken from skewers and serve hot, garnished with fresh cilantro and lemon wedges if desired.
