Easy Chicken Tikka Recipe

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 8-10 bamboo skewers, soaked in water for 30 minutes

Instructions:

  1. In a large bowl, whisk together yogurt, lemon juice, olive oil, cumin, paprika, coriander, turmeric, salt, cayenne pepper and black pepper.
  2. Add the chicken, stirring until coated in the marinade. Cover and refrigerate for at least 1 hour (or up to 12 hours for best results).
  3. Preheat grill to medium-high heat. Thread chicken onto the soaked skewers, then grill for 12-15 minutes, turning occasionally, until chicken is cooked through and slightly charred around the edges.
  4. Remove chicken from skewers and serve hot, garnished with fresh cilantro and lemon wedges if desired.
