Easy Porcini Soup Recipe

Ingredients:

  • 1/2 oz dried porcini mushrooms
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup dry white wine
  • 4 cups chicken or vegetable broth
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • 1/4 cup heavy cream

Instructions:

  1. Soak the dried porcini mushrooms in 2 cups of hot water for 20-30 minutes, until they are soft and plump.

  7. Season the soup with salt and pepper to taste, then stir in the heavy cream.
