Ingredients:

  • 1 pound boneless salmon fillet, skinned
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped shallots
  • 1/2 cup chopped mushrooms
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream
  • 3 tablespoons chopped fresh dill
  • 1/2 cup grated Parmesan cheese
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten with 1 tablespoon water

Instructions:

  1. Preheat oven to 375°F. Season salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear salmon until browned on both sides, 3 to 4 minutes per side. Remove from skillet and set aside.
