Eggplant-Pepper Tart Recipe

Ingredients:

  1. 1 sheet of Puff Pastry, thawed
  2. 1 small Eggplant, sliced into rounds
  3. 1 Red Bell Pepper, sliced into thin strips
  4. 1 Yellow Bell Pepper, sliced into thin strips
  5. 1/4 cup Olive Oil
  6. 1 tbsp Balsamic Vinegar
  7. 1 clove of Garlic, minced
  8. 1 tsp Dijon Mustard
  9. 1/2 tsp Salt
  10. 1/4 tsp Black Pepper
  11. 1/4 cup Crumbled Goat Cheese
  12. 1/4 cup Chopped Fresh Basil

Directions:

  1. Preheat the oven to 375°F.
  2. Place the sliced eggplant rounds on a baking sheet lined with parchment paper. Brush with 2 tablespoons of olive oil and season with salt and pepper. Roast in the preheated oven for 15-20 minutes or until fork-tender.
  3. In a large bowl, whisk together 2 tablespoons of olive oil, balsamic vinegar, minced garlic, Dijon mustard, salt, and black pepper. Add the sliced peppers and stir to coat them well. Set aside.
  4. Unfold the thawed puff pastry onto a lightly floured surface. Using a rolling pin, roll out the puff pastry slightly. Transfer it onto a baking sheet lined with parchment paper.
  5. Arrange the roasted eggplant on top of the puff pastry, leaving a 1-inch border around the edges. Arrange the marinated sliced peppers on top of the eggplant, overlapping them slightly. Brush the edges of the puff pastry with the remaining 2 tablespoons of olive oil.
  6. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and puffed up.
  7. Remove from the oven and sprinkle with crumbled goat cheese and chopped fresh basil. Cut into slices and serve warm or at room temperature.
